ive been a vegetarian for nearly 15 years. i dont mind or care if people who eat meat around me (both my roommates are omnivores!) and dont seek to "convert them to my ways", but i find great joy at being able to show people the creative and delicious ways you can make food that they hadn't thought of before.

sandwiches

  • egg salad - i consider egg salads to be very choose-your-own-adventure type of cooking. this is a good beginner guide. i personally skimp on the celery, and throw in some garlic powder and rice wine vinegar.
  • falafel - SO much easier to make than you probably think it is. if you have a blender or food processer and are willing to let chickpeas soak overnight, you can and should make this. eat it with chopped veggies and this tahini sauce for a great time.
  • hummus - much easier than you think it is! 1 hour in a pressure cooker! chop carrots, bell peppers, and cucumbers to dip while it cooks!
  • breakfast grilled cheese with soft scrambled eggs and pesto

soups, stews, and curries

  • wild rice soup - wild rice, carrots, mushrooms, and celery mixed with a roux. originally made as a request for an old roommate, this is a winter staple of mine. i bought an instapot specifically for this, but there's stovetop and crockpot instructions at the link too.
  • locro de papa - creamy potato soup with cheese. make with empanadas for an absolute feast.
  • west african peanut soup - peanut butter, tomato paste, and greens. i like to add in roasted sweet potatos to mine, and often substitute the listed collard greens for kale. if you are interested in this flavor profile or enjoyed the recipe and have the money, i would also highly recommend picking up a copy of Afro-Vegan by Bryant Terry.
  • best lentil soup - lentils, carrots, kale, and tomatoes. top tier go-to soup. highly recommend using a blend of red and brown lentils.
